Happy St Patrick's Day!!!

It's another gorgeous day here! The sun shone brightly, the sky was blue with soft wispy white clouds here and there... and (for Katherine) it was still a little nippy. ;o)

I was going to have our traditional boiled dinner tonight, but Matthew went out after work and it's too much work to bother with for just me. Instead we'll have the boiled dinner tomorrow night. It will be a well deserved dinner after doing a lot of stuff around the house all day... at least that's the plan for tomorrow *and* Sunday. We'll see how much actually gets done. ;o)

Well, we had Irish stew, which was delicious - plus I didn't have to make it! We went to an Irish pup which had entertainment. Then I had green beer. I wore shamrock earrings and a plastic canvas shamrock which I made myself. Now I am about to put on my bathing suit so that I can go to the pool until

2 AM. Once a year this happens!

Hi Ladies,

DH and I went to our favorite Chinese buffet and had the best corn beef and cabbage you ever tasted. I'm not fond of corn beef, but this melts in your mouth and isn't the least bit salty. Did even try the cabbage, don't like it cooked. LOL

Hi Nora! One of the nurses I work with told me how to make corned beef and cabbage so now I'm really excited to try it this week. I've never eaten corned beef. Just the stuff that comes in a can. I wouldn't expect to see it on a Chinese buffet though. That's interesting. And I LOVE cooked cabbage! So this will be a fun experiment.

Boiled Dinner (Like corned beef and cabbage, without the corned beef. Much nicer in our opinion!)

"Maple Leaf" Sweet Pickled Pork Cottage Roll (wrapped in netting inside the plastic) Onions - 2 Lg (whole)

1/2 Lg Cabbage - cut into wedges 1/2 Lg Turnip (rutabaga) - cut into slices 1/2" thick Carrots (30 or so baby ones - or equivalent) Potatoes - 8 to 10 Med

In largest boiler you have, cover cottage roll with water and boil high while preparing vegetables. In order add - onions, cabbage, turnip (rutabaga) & carrots and continue to boil for approximately 30 - 40 minutes. Add potatoes, taste liquid at this point for saltiness and add salt if necessary. Boil until potatoes and all are cooked. Remove meat to a plate & using a slotted spoon move vegetables to a bowl to serve.

Chop and fry leftovers for "Bubble & Squeak" (hash) the next day.

Save broth (it freezes well) for soup stock.

Hi Pamjam,

This Chinese buffet does great Italian food like chicken parm that even a man who runs a near by Italian place comes over and eats as he says he can't make it that good. They also have American dishes and stuff that kids love along with a great salad bar, desserts and all the Chinese dishes. Oh yes, I forgot to mention the hot and cold shrimp, crablegs and steamed clams that my DH loves. LOL

Enjoyed them a lot. It was a small venue which was different for me. I've now seen them three times and heard that they might be back in the summer.
