Convection Cooking

When is the best time to switch your oven to convection? Is it only good for cakes and cookies or are there more uses for it?

Wouldn't roast a prime rib any other way than with convection! I use mine all the time for everything. Great to "crisp" up the skin on anything roasted....i.e., duck, poultry.
