OT. Shrewsbury biscuit recipe.

Here as promised.

8oz self raising flour. That is flour with the raising element already added. 4oz caster sugar. It is a fine granule sugar but not the one used for icing. 4oz of butter or margarine. Tastes better with butter 1/2 lemon, grated rind and juice 1 medium egg beaten.

Heat oven to 180C 350F Grease two baking trays.

Mix flour and sugar , rub in fat. Add lemon juice and rind and enough egg to make a stiff paste. Roll out thinly and cut into 3 inch rounds. Place on baking tray and bake for around 15 minutes. Makes about 24 biscuits.

The original recipe had 2oz of currants added but since they were in short supply we just used to make them plain.

Looks like a fabulous recipe, Shirley! For those in the US, caster sugar is the same thing as superfine or baker's sugar. Baker's sugar is all I use here ever since I discovered it.

Unfortunately they are not on my low fat diet either. So I do not make them any more. I cannot have DH putting weight on. Shirley
