I'm trying to decide between Bernina Artista, Embird and PE Design 5. Does anyone have any opinions?

I really like my Artista Software. I upgraded from V3 to 4 and it made a great difference. V4 is much more intuitive. The designs stitch out great and the auto-digitizing options are great too. JMHO, Nana
Yahoo has groups that discuss all those packages, you might try there (I did)

I can't offer a comparison, but I can speak very favourably about PE Design (v5.6 here)
It's powerful and, if you take the time to read the book and go through the tutorial, will do everything you want it to, and then some.
