OT Cookies!

I was sending this recipe to an Aunt of mine and thought it might be enjoyed by some here also. I think I posted it several years ago but it is still very good! Apologies up front for calories and fat involved. I've been kind of in the duldrums lately. These will help (Joan's cake might also) Enjoy, Taria

Best Chocolate Chip cookies from Sunset cookie book

1 cup softened butter or margarine (I use butter these days) 1/2 cup solid vegetable shortening 1-1/3 cup granulated sugar 1 cup packed brown sugar 4 eggs 1 tbs vanilla 1 tsp lemon juice 3 cups flour 2 tsp baking soda 1-1/2 tsp salt 1 tsp cinnamon 1/2 cup rolled oats 2 x 12oz packs choc chips 2 cups chopped walnuts or pecans

In lg bowl beat butter, shortening, and both sugars on high until fluffy (about 5 mins). Add eggs one at a time, beating well after each addition. Beat in vanilla and lemon juice. In another bowl stir together flour, baking soda, salt and cinnamon and oats. Gradually add to butter mixture. Stir in nuts and chips. Use scant 1/4 cup of cookie dough for each cookie, drop onto lightly greased cookie sheet, spacing about 3" apart. For soft cookies bake 325F for 17-19 minutes or until lt golden brown. For crispy cookies bake 350F for 16-18 minutes until golden. Transfer to rack and cool. Store airtight and makes

3 doz large cookie.

I make smaller cookies and bake at 350F.

These freeze really well.

they sound delicious, Taria. just copy/pasted that recipe to try out, maybe for St Pats Day. i'll have to cut the recipe in half tho. just dh and i would eat'em. we went up to SILs house on sunday to have a BBq. BIL was over from Oz for a couple of weeks. good time for them all to have a good old natter. i took up my Oat Fudge Slice. they all loved it so much i wrote the recipe down for SIL. BIL, who lives alone in Oz, loved it so much, also the fact that it was an easy recipe and had his favourite breakfast cereal in it, also memorized the ingredients and wrote it down just in case, lol. i'll be interested to hear how it bakes up for him once he settles back into home life there. he returned yesterday. not to the best weather i have to say. there is a hell of a lot of flooding up in QLD, tho not sure if it is where he lives atm. he is house sitting further inland at bit now and he has a neighbour with internet access so we can get msgs to him easily. fingers crossed they are high and dry now. it dawned on my yesterday when talking with SIL (these two are DHs siblings) that for her (living alone also, tho has friends drop in often) she could bake the Oat Fudge Slice in cupcake papers and freeze them to use as the whim takes her rather than have a full layer slice to have to eat her way thru all at once. in this climate it doesnt hold up long so must be eaten quickly. she agreed it would be best for her to freeze after baking in smaller amounts. i think if the full recipe in an 8" pan bakes in 35mins, the cupcakes would probly only take about 15 to 20 mins? hmmmmmm. i'll have to make it again soon to test out the smaller portions idea to see how it works in our house. only dh and i eat them as ds is a vegan and they do have eggs in them. tho i guess i could try the egg substitute stuff he eats to make them. hmmmm. we'll see. cheers, j.
