OT cooking corn dogs?

I just printed Alton Brown's recipe for corn dogs. I hardly ever fry anything but just must try this one. If you want to take a look at the whole thing you can type in Alton Brown corn dog and go straight to it. My question: for 8 corn dogs the recipe calls for 2 tablespoons of finely minced jalapeno pepper AND 1/2 teaspoon cayenne pepper. Good gracious! Are they kidding? I didn't plan to build a bomb. Isn't that a serious level of heat? What do you think? Polly

Might not be too bad if you've seeded the pepper......

OTOH, that's corn dogs for *grownups*. I wouldn't plan on feeding it to kids, I don't think.

Too much heat for me! We actually have a little corndog stand here (cutest little hump of an Airsteam trailer in the bookstore parking lot) that makes them fresh from 11am to 4pm. So far I have resisted but I may just have to indulge next time I go by. I haven't had one for years. Lots of yellow mustard for dipping and no peppers for me! I'm a purist, gimme a good old fashioned county fair corndog.

We can do beignets but you'll have to stay for breakfast. Actually, you would have to stay for breakfast anyway since Nobody, but nobody goes out after dark around here. Gators, you know. Polly

Why would anyone want to spend the time mixing up anything, Polly? You can buy corn dogs and pop them into the toaster oven and they come out yumm;y. Have you ever tried to dip hot dogs in corn bread mix?

Well, you see, I really do try to watch out for fat and transfat and cholesterol and such. Our DDs used to try to stifle their brothers' appetites by reading the ingredients in foods. It never worked. . . but I do have a little control if I do it myself. Polly

Alton used a GLASS to hold the batter! How smart was that? And chopsticks as the skewer.

Didn't break out the fryer, but I made his little hamburgers tonight for supper. Just (almost) like White Castle.

As you might imagine, there are very few restaurants in the Swamp that provide chopsticks but I did finally manage to find some. How I do love AB. He doesn't giggle, wear a WonderBra, use evoo or constantly wipe his coiffure from his eyes and then put them in the food. Did you get to see him where he showed us what putting together one of his segments was like? The costumes, actors (?), and trials that his staff somehow survive? Now that was fun. Polly
