I've never had a problem with any 100% cotton knit shirts, that I made, retaining their color. I wash them in warm or cool water with liquid detergent (I never use powder because it is too harsh and contains salts). For really bad grease stains, I use Lestoil. Since the purpose of a knit shirt is for comfort, I don't know why anyone would buy or make one with uncomfortable, make-you-sweat, pills-like-crazy polyester in any quantity. It's important to use high quality fabric and not the junk knits commonly found at Joann's--- though there are rare exceptions. I've been getting very high quality knits from Denver Fabrics via mail order.

There's polyester and there's polyester.
A lot of the new technical/athletic fibers are wonderful. And they don't fade.

What do you mean by "technical/athletic fibers" and in what ways are they wonderful? The OP was asking about dark cotton and/or poly knits for shirts. Perhaps you can cite an online source where the fabric you're talking about is stocked. Other than wicking materials, which are not the topic here, I have yet to see any wonderful poly sport knits so perhaps you can enlighten us. :)
