Ergonomic height for cutting table

I have one of those cutting tables, (which someone recently made light of) that I purchased from one of those "typical" sewing stores. Lately I've noticed that my knees and now my back bother me when I have been cutting on it. I'm beginning to think it is too high. I really love the table, and it is a "tool" I put away. It has casters and can fold down to almost nothing in my 9' x 9' sewing room.

Does anyone know how to measure the correct cutting height so I can either take the casters off this table or get some better carpeting?

Stand straight, hold you elbows tight against you sides , your forearms straight out in front of you, parallel to the floor; now relax your hands and wrists and let them drop down without moving your forearms. Have somebody measure from your finger tips to the floor and that is the perfect, ergonomic height for your work surface when standing.

I always look at the pile of books at yard sales. I picked one up for a nickel that was titled "Building Ergonomic Furniture". Not that I build furniture, but I collect interesting books for "The Library" which was another old metal sign I found and hung on the guest bath door LOL
