Hi, I was thinking of making ice cream sandwiches by putting ice cream between these different flavoured wafer thins which I recently aquired. Is there a way of coating the wafers so that the ice cream doesn't soak through the wafers and make them wet and soggy?

I would coat them with chocolate - white if you don't want to add much flavor. If you only coat the side that touches the ice cream (which is hidden) you won't have to temper the chocolate. That should waterproof it.
