Does anyone know how long it takes brown rice to cook in a slow cooker? I want to use it instead of the icky Minute Rice the recipe calls for.

Usually 2 to 3 hours on low. Check to be sure that all water or whatever liquid you are using (i.e. chicken stock or beef stock) is absorbed. It can be left to cook longer if you are adding other ingredients. Use Basmati brown rice if you have it available. Short grains seem to cook better.
Rice recipe
1 cup brown rice 1/8 cup wild rice, parboiled and rinsed well 2 cups chicken or vegetable stock 1 cap (from shaker) Mrs. Dash Gallant Garlic, Garlic and Herb mixMix all well, cook on low 2 1/2 hours Do not stir at all while cooking, or you will get sticky mush.
