I have a wonderful new gas stove. Flames burned yellow at first, but the directions said: that's normal the first few times. Air gets into the lines.
After a week, periodically I'd get yellow flames. General Electric said if it's sporadic, then it's gas pressure. If the burners were out of adjustment, then it would not be sporadic.
Gas Company says it's the stove.
I love it when these kinds of things happen. Tweedle Dee and Tweedle Dum!

While I've yet to try one of the caramel recipes, everything else I've made from the cookbook has been wonderful, from peanut brittle to buttermints and assorted chocolate things in between. ;) So, see if you can lay hands on a copy of Candymaking by Ruth A. Kendrick & Pauline H. Atkinson. There's a section specifically on caramels, a good dozen recipes or more.
