Leslie's caramels

Leslie, I made your caramels the other day. YUMMO! They turned out great. This is the first time for me. Mine are darker than the store bought ones....is that normal? It doesn't really matter, cause they're goooooood. I used hamburger patty squares (waxed paper ones) to wrap them. I just the the patty squares in half one way and wrapped. I do have to say the wrapping part is not my favorite thing to do...tedious work for sure and for certain! It is sooo worth it tho.

I'm afraid unwrapping is equally impossible. There's a brownie recipe here that calls for removing the silver foil from Hershey's kisses or silver bells and poking them upside-down into a pan of straight from the oven brownies. Somehow (?) it always takes lots more than estimated; this is even worse if you muster up some assistance from just any age group. Polly

You can buy Hershey's kisses unwrapped in the baking aisle near the chocolate chips. Sure saves time when needing a chocolate fix!

You are kidding? Do they really? Wow. I've always calculated the loss rate in peeling kisses for brownies at about 50%. It may be worse. Polly

There's a Hershey's website that will inspire you just forever. We have an Open House on Christmas and I try to have good stuff to offer. Actually . . . we don't invite anybody, the Survivors of other productions just usually wander in. The peanut butter cookies with the kiss sounds like a winner. I'll look for it too. Re: wrapping caramels.

I was wondering if using "Press and Seal" would work. Besides using it for quilting, it might work for wrapping caramels.

Pull off 2 pieces about 3 inches wide. Place the first one sticky side up on the counter, then place a caramel every 3 inches apart, then place the other piece of press & seal on top of the first. Use your finger to press around each candy, then cut apart with scissors.

I've made caramels in the past, but avoid it like the plague because of the individual waxed paper wrappers.

I also had a devil of a time getting the caramels out of the pan they set up in. Any hints on doing that? I've thoroughly greased the pan, and I've used greased parchment paper, but still could hardly peel the caramel out of the pan.

I HATE Press & Seal when it's sealed against itself. The only way I can get it open is to cut it- there's no peeling it apart to separate the two layers. When you need a caramel like *right now!* who wants to go searching out a pair of scissors??? ;-)

If the caramels stick to the pan there's a few options.... #1 butter the pan a bit heavier the next time, but it's too late when they are done #2 heat up your oven and stick the pan in for just a few seconds to warm the pan and release the caramels #3 draw a sink full of the hottest water and set the pan it in the water for a minute to warm the pan- be very careful to not splash any water onto the candy. Warming the pan melts the butter you used to 'grease' the pan and will release the candy

I flip my pan of caramels over and drop it onto a big cutting board from a height of about 8 in. If that doesn't work, then I gently SLAM the pan upside down on the cutting board. If that doesn't work then I go to the sink full of hot water method.

BTW- I've ordered some candy wrappers that NightMist located online. I guess I'll be forced to make another batch to try out the wrappers. I'll report back when the wrappers arrive,
