OT:Helen's Fried Peach Pies

Sorry about the bad post, here is the 'recipe' for Helen's Fried Peach Pies:

1 lb dried peaches, unsulphered is best sugar -- as much as you need to make them sweet enough margarine or butter self rising flour -- enough to make the dough milk -- see above solid Crisco shortening

Cook peaches with sugar until very tender. Mash them up a bit and set aside. Mix milk and flour to make a soft dough. Pinch off a bit and roll it into a t hin circle. Put the right amount of peaches on half the circle of dough. Put some pats of butter or margarine on top of the peaches. Fold over the dough to make a half-circle. Pinch the edges to seal. Melt some Crisco in a heavy pan. Put in just one pie at a time, or maybe two. Brown them on one side and then turn them to the other. Keep the heat high enough to make the grease very hot, but not burn the pies. Stack finished pies on a paper towel to drain. Eat them warm with cold milk or hot coffee or eat them cold with cold milk or hot coffee.

Taria, my husband says he may have been influenced to stay with me by these pies. He says he figured if he just stuck it out that my mom would make them again sooner or later. And yes, they are that good. This is one of the recipes that was taught to my mom by a very elderly African American woman who had been family cook for a doctor's family almost her entire life. Her mother had been a cook for the same family, it had gone all the way back to slave days with mother handing off cooking duties to daughter and on down, and then the younger woman going on to cook for the younger family when one of the 'young folks' started their own household. This particular woman was incredibly fond of my dad. He sang religious music at churches around the area and had a little show on the local radio station on Sunday mornings. When Mom and Daddy married, Mom couldn't boil water. So this dear older woman took mom under her wing and taught her a handful of recipes. And those few recipes are precious in our family. Mom never became an engaged cook. She loved to make candy and sweets, and was amazing at that. But regular food was not her strong suit. So we just lived for the times she made those recipes: chicken and dumplings, turkey roll, meat loaf with tomato glaze, fried peach pies and banana pudding. Wow.

I used to make these pies for my late husband, same recipe except mine added a teaspoon of vinegar to the dough (don't have a clue why); it was my MIL's recipe. My husband's absolute favorite was to use dried apricots instead of peaches. I haven't made them in years, but may have to get out my rolling pen. Thanks for triggering the memories! Michelle G.
