Ok, y'all are going to think I've lost it, but I've never had bear meat, and I understand that hunting season is right around the corner. I would love to trade for some bear meat. Good golly, Lisa, I thought this was some warped-type spam! I had to read it twice to realize you really meant it and then your email address and name clicked for me. Folks, Lisa is for real and has been around rctq for a long time- she's just a bit 'different'! LOL Bear meat??? Ugh!

I have eaten nearly every kind of game meat possible in the West/south part of the US, except bear. My Granny assured me that bear meat is a bit greasy and gamey but still quite tasty. Armadillo is OK. Racoon is edible (the folks in Gilette, Arkansas have an annual Racoon Festival where they serve up tons of the stuff). Rattlesnake is nasty because you can't stop thinking about what it is, ditto eel. Squirrel, on the other hand, is the most delicious stuff on earth. If I thought I could have just one more meal (cooked by my Granny and aunts of course) of braised squirrel, gravy, and all the trimmings, including good biscuits for the gravy to go on, I could die a happy woman.

So if I can find some bear, I will send it on to Linda. Where I live it just may be possible that somebody up here has a steak or two in the deep freeze.

Of everything you just listed (at least the meat parts, not gravy and such), I have only ever had eel. But in Denmark smoked or even fried (shallow fried, from fresh, not smoked) eel is considered a delicacy.

I don't think I ever had the fried variety, but I _love_ smoked eel. Next time I'll get it is Christmas (note to self: make sure Dad knows this should be on the list!).

I have also tasted eel Japanese style, which I think is braised/stewed - well, cooked in liquid somehow.

So I have to disagree on the eel part :-) If you ever go to Denmark, make sure to taste smoked eel, probably with some scrambled egg to go with it. Yummy!

I've even had antelope. It tastes of beef cooked with oodles of the 'sage' herb, along with beaver and rabbit..can't recall ever having had squirrel.

How about trying some alligator or nutria. Have you ever tried baked beaver with gravy.

My Dh once caught some eels when he went fishing. Well you have never seen such a performance in your life when he said I had to skin them. I was told to use salt so I could grip them. I started with them on the draining board. They slipped and slid all over the place, into the sink and even on the floor. I just could not keep hold of them. I must have wrestled with the damned things for over an hour. Following a recipe I gentle fried them in butter. To add insult to injury no one would eat them and they ended up on the fire. I told him never to bring eels home again. Shirley

however....squirrel and rabbit are good, tastes like chicken... venison chops are a favorite, wild turkey, wild goose, duck, pheasant- all good. Pheasant especially, with orange glaze. and wild mushrooms on the side fried in butter and garlic.

i took a course once on survival. of course that was when i hunted and fished. dont do too much anymore.

now i really am hungry.....i only had an apple for lunch.... amy

HAHA, yes, it's me. I can't get RCTQ through the newsgroup list and don't often remember to go out on the web to check it out, but I put a button on my new IE for RCTQ and it works when I remember. Anyway, yes, it's me asking for bear meat. Lemme be clear, since I got blasted on another list: I'm not asking anybody to go shoot Smokey on my behalf, but only can I have a piece or two if you happen to shoot one for yourself. Some people believe bears should not be killed unless one is just desperate for food.

Leslie, I have been told that bear meat is REALLLLLLY good, and that biscuits and french fries made with the fat from a berry-fed bear will make ya wanna smack yer mama. I'm up for trying MOST things, although organ meat is OUT, and I'm not interested in snakes, snails, puppy dog tails...or eels. ;)

O goody; I hope you find some! LMK. I have never had squirrel except as one of the ingredients of Brunswick stew, which contains:

1 squirrel 1 Rabbit Venison Pork Beef and Chicken.

I have heard a tale (pardon the pun) from my family about going to someone's house for squirrel stew, and the hostess kept one squirrel whole. When hubby wasn't looking, she put Mr. Squirrel in the pot with his head poking out from under the lid like he was looking around to see wht was up. ;)

Actually, I had alligator just last Saturday. Tastes like frog ... which, in turn, tastes like chicken. ;)

I think we only remove the skin after frying (or maybe not at all? - remember, I've never had the fried version). For the smoked ones, the skin comes of easily, like off of smoked mackerel.

They tasted bad, or no one liked the idea?

and of course.....frog legs, i can remember them jumping in the frying pan at my Granny's house.....i still wont eat those to this date!

Isn't the rain grand. Doesn't the air smell nice too. :-) I've been so terribly worried about the drought. My grandfather's well was drying up. Our firefighters have not gone to help in CA this year because it is so tinderbox dry they were afraid wildfires would start here while they were away. I'm just so happy to see rain again.

The season and limit per hunter for bears is determined like any other big game. They don't just turn a bunch of guys with guns loose in the woods and tell them to go to it. The Game Department people look at the local population and make a determination based on a ratio between that population and available resources etc. Sometimes they screw up yes, but more often it is in not allowing enough animals to be taken than in authorizing too many. With something like bear many states wait until they see how many people apply for permits before issuing limits, because there are often many fewer hunters for something like bear than for say deer. Sometimes hunting certain animals is restricted to certain areas where there is an overpopulation. Sometimes they actually have to bring in professional hunters. I am minded of one year in Pennsylvania when they issued a two bear per hunter limit, and only took two bears in the whole state. Common black bears are not animals with a limited range, as opposed to a lot of the animals on the endangered lists. You find them all across at least the northern half of North America. Some of the other species are a lot more closley managed.
