You asked for it: Chocolate Souffl=E9 (no matter what you've heard, its not that tough)

1 tablespoon softened butter 3/4 cup sugar 1/2 cup espresso 6 oz. semisweet chocolate chips (half a bag) 1/2 cup heavy cream 6 eggs 1 tablespoon Kalua, Brandy or Grand Marnier 12 oz. quark

Preheat oven to 375 F. Rub 6-cup souffl=E9 pan with the butter and sprinkle in 1/4 cup of the sugar. Rotate the pan to coat it with the sugar and dump out the excess. Put the remaining 1/2 cup of sugar, chocolate and espresso together in a small saucepan and melt over low heat, stirring to combine. Remove and cool slightly. Blend the eggs, cream and brandy in a blender. Continue to run the blender on low and add the chocolate mixture, spoon in the quark and continue to blend for 30 seconds. Pour into the prepared souffl=E9 pan. Bake 50 to 60 minutes at 375F.

I happened to have two sweet ready made crusts in the cupboard from a prior plan. I did not feel like buying tea biscuits and battering them into a crust this time. These crust are very thin, so I made 2 chocolate tarts from them. Exercising off the first half of the first tart just now.....
