OT: Recipe WANTED -

Speaking of recipes, I have been looking for one here recently and can not find a GOOD, easy one for - CORN FRITTERS.

A couple months ago the elderly lady I take on errands, well we ate somewhere (blasted mind!) and they had these like hush puppy things the waitress called fritters. They were to die for and since I have tried to make some using cream style corn like mama used to make, but they were just blah!

HELP?!

INGREDIENTS:

1 1/3 cups buttermilk baking mix 1 1/2 teaspoons baking powder 1 (14.75 ounce) can cream-style corn 1 egg, beaten 1 cup vegetable oil 1 1/2 cups maple syrup

DIRECTIONS: In a medium mixing bowl, sift together baking mix and baking powder. In a small mixing bowl, combine corn and egg. Combine egg and flour mixture, stir gently. Heat oil in large skillet over medium heat. Drop batter by tablespoonfuls into hot oil one layer at a time. Fry for 2 minutes on each side or until golden brown. Drain fritters on absorbent paper. Serve immediately with maple syrup or molasses.

HI there Davey!! Funny you should ask for this.. My mom used to make them and now I do...... Easy Peasy.

Corn Fritters

1 egg... separated ! can Niblets corn... drain juice and save it about a cup of flour, use juice and some milk to make a batter... add egg yolk Add corn, salt, pepper and tiny bit of baking powder

beat egg whites until stiff and fold in batter.

Then I fry them in a 10 inch iron skillet that has about 2 inches of hot canola oil.

plop them in with a teaspoon, turn once, scoop out with slotted spoon, put in Paper toweled bowl, this absorbs the extra oil.

You may need more flour.... you dont want the batter toooo thin... make them about the consistency of prepared muffin batter.

Neets, That sounds like the recipe my Mom used and I had forgotten! I do remember the Niblets corn. Thanks for tweeking my memory. :-)

LOL..... we love these fritters... DH had never had them til Mom made them and now he asks for them periodically. I just never measure anything.. lol... only when using a prepared box cake mix...I was lucky yesterday.. I was presentented with 4 huge green tomatoes.. so tonite I get to have.........FRIED GREEN TOMATOES!!!!

I guess I wont have time for scrapping!!!LOL..hugz Neets

Oh my I love fried green tomatoes!! My Dad was the one in our family that always wanted them and Mom learned how to make them just right. I thought everyhing that Dad did was too cool, so I started eatng them with him and love them to this day! What is your recipe for those?

Thanky much there Neets!! That sounds mre like what we had where ever it was!1 Because the corn was whole pieces. But granted I will try both recipes.

Fied Green Tomatoes - YUMMY!! I getthem all the time from grocery all year and have them. the ones that you get at grocery (Greenhose ones) if you get them even half red they fry up real good too. It is the only way I will eat green house tomatoes because they are so like tough?

I know green tomatoes fry up really good. I use corn meal to roll them in first. Then I did not get to cook them tonite.. had a house showing. BUT!! Got a nibble on the house yesterday so we are waiting...

Cannot get green tomatoes in any stores around here!! I hope I can in Florida! Or maybe DH will grow some.

My oldest DD hates ripe tomatoes, but loves fried green ones. She grows a plant inside during the winter with a grow light just to have the green ones. They seem to be smaller, but taste just as good. Sandy
