Does anyone have any idea why the seams on the school-type polyester skirt I nade won't lie flat? I pressed them open and then finished the edges with zigzags.

Polyester can be a pain to press. Try using a hotter than recommended iron, with a damp cloth, rather than a steam iron, unless you have a steam generator iron. In that case, hotter than recommended, with a pressing cloth. Test on scraps to get the best heat without melting the fabric!
While Whack it till it cools down! the seam is still damp from the pressing, bang the seam with a block of wood!
Do you mean I should use a presser?
I have a presser/pointer wooden thing ( :) ) for doing collars - would that do?
