Bean Salad recipe (OT)

1 can red kidney beans 1 can green lima beans 1 can chick peas 1 can yellow beans 1 can green beans 1 onion, thinly sliced 1 carrot, grated

Drain the beans and rinse well. Pour dressing over the beans, marinate overnight, and stir occasionally.

Dressing: ½ cup sugar ½ cup oil

2/3 c white vinegar ½ tsp salt (I don't use this) 1/8 tsp pepper

Mix well, and pour over beans.

This is the best! And you can alter the amounts of the veggies to put in more of what you like. I usually use extra chickpeas. The carrots add a nice colour, and the onions are absolutely necessary

Funny, when I was little I used to *love* the lima beans (and the barley) in the vegetable soup... and I know that most kids don't care for lima beans.

Let me know how you like it when you get around to making it. It makes quite a lot, so is best for pot lucks or when you are having company. Of course, if Matthew likes it, and if he has an appetite like my son's, you will need it just for the two of you.

Oh you mean "The Bottomless Pit"? ROTFL I swear this boy/man has two hollow legs... and he has ALWAYS loved vegetables... so it will likely be for the two of us when I get around to making it. I'll have to make it someday when he isn't home so that it will be there for supper... or the next day's lunch (hidden at the back of the fridge so it doesn't become a late-night snack and is gone before I get a chance to even taste it. LOL Noooo, just kidding. He's usually nice enough to put some in a small bowl for me and then polish the rest off on his own. hehehe

LOL Well, you tell him that it improves after sitting for a while. Seriously, I have let it "ripen" for three or four days, in a covered container (glass preferably!), and it gets better and better. Luckily, Keith really doesn't like it much, so he will only eat a small serving.
