OT Recipe Definitions

No marrow isn't cucumber at all - wrong texture and too high a water content for a marrow.

Given that in the UK courgette (zucchini) are about 6-7 inches long and about 1-1.5 inches across, a marrow (or sometimes "vegetable marrow") is basically a very overgrown zucchini - about 15 inches long and about 6-8 across (i.e. the size that zucchini were when I was growing up in Oz).

His wife (Trudy?) got diagnosed with cancer years ago, and he changed his gourmet style from fat/cream/rich to healthy low fat, season with spices around the same time.

As I understand it, quark is skim milk cream cheese. Most people seem to be describing frais fromage, which is more yogurt like. We do have that here in NA as well, just heavily sweetened/flavoured and sold under the label Minigo (for kids).

Thank you for clearing that up, Ray! I have often wondered what vegetable marrow was, but we couldn't mention it in front of my Dad. After being made to sit and eat it all day (even though it made him sick to his stomach), the mere mention of it used to turn his stomach. I'm sure it isn't something that I would enjoy eating either, as I'm not fond of zucchini at all. I have had a couple of slices of zucchini bread before, but I couldn't manage to eat much more of that even. There is a really nice soup (vegetable with pasta) that is in the Deli department of one of the grocery stores in the city that has small chunks of zucchini in it.... it's really nice on a winter day... but then, it only has a little zucchini in it.

Late again in replying, but In the UK passata and tomato puree are different things.

Tomato puree is concentrated in tubes, and passata is in tins.

Passata can be made by sieving chopped tinned tomatoes. I usually squash the lumpy tomato bits through the sieve too :o)
