Does anyone have a recipe for stabilized whipped cream that doesn't use gelatin? Since gelatin is not acceptable for vegetarian guests, I need to find some sort of recipe for stabilized whipped cream for a banana whipped cream cake. Thanks,

I just add some powdered (confectioner's) sugar. It will hold up for a day or so. Cake doesn't last more than a day at my house. You can also check out stores like Sur la Table, Williams Sonoma, and so on for stabilizer for cream. I think they are made from modified vegetable starches. Another alternative might be a product from Richs called Bettercreame. It is a non-dairy whipped frosting. It is sold at bakery supply houses and at Gordon Food Service if you have one in your area. Here is a link to the product detail. It looks vegan to me.
