I usually put one strand of wire/sofflex in a single strand of beads. But I wonder whether it would be smarter to use two smaller strands.

Just a string of beads. Most any string. I'm just wondering about the security of using one heavier strand vs two thinner ones.

I think if your wire is the 49-stainless-steel-strand variety, and your crimps are sound, you probably only need one.
I know the break strength is listed for most of these, so you could use that as your guide.
