OT: Atkins/low carb diet

Ken has decided to go on the low carb diet. I don't want to go on it, but would like to incorporate some of it into my ... not diet, because I am not...just eating. So that I can fix meals for the both of us.

The problem is, I don't cook that regularly, or that well. I am a box eater. Or pasta. I fix Hamburger Helper, or those new chefboyardee things where it's the crust with the pasta on the top. Of course, all of those are "nono's".

I pulled down one of the pastas that I have (penne pasta), and it has zero carbs. Great! Pulled down the sauce, and of course that has it. Okay, and with my not knowing, thinking carbs are breads, I looked at the can of pineapple, GEEZE!!!!

Even cans of soup are between 19-23 carbs. He says that is pretty much too high.

So if people would be willing to share their "quick and easy" recipes, and/or sites, I would really appreciate it. Oh, and it's not that I am against cooking, it's that I don't know enough, and sometimes don't have the patience to do it all (like I couldn't make bread from scratch, or do things that require "blend for 30 seconds" because I never took that good of cooking lessons, so I don't know the fancy things...heck, making cookies, if I have to use the hand mixer, I get more of it on me than anywhere (which is why I don't have one right now...)

If your penne pasta has flour in it it has carbs. Low carb pasta isn't very good. Get the Adkins book and read it. You really won't have to do much different but cut out the flours and sugars and most fruits. Strawberries and blueberries are a good fruit. If you think basic meats, fried, sautéed, baked, grilled and a salad or green vegetable, no bread. That's pretty easy. They have a low carb bread Natures Own that is fine for sandwiches. Do a low carb search and you'll find plenty of recipes and tips.

This is a diet that you HAVE to have the stuff on hand that you can eat or you will be doomed. One thing that helped me was to grill up a bunch of hamburgers at one time. It's easy to fix for lunch. Heat it up, put your favorite toppings... cheese, onion, pickles, mustard right on top (without the bun) and it's delicious. Also, Breyers makes a low carb chocolate ice cream... CarbSmart... which is made with Splenda. You can't go wild with it because it still has some carbs but I still lost weight while eating just a little of this to satisfy my sweet tooth.

Good luck, Gennie

First diet is a four letter word and I never use it. I always say change of eating habits, etc. It's much easier to do that than go on a diet. You always feel bound by a diet and you are more likely to cheat yourself.

That said, when I changed my eating habits I decided to do less fat grams. It's pretty easy. You will lose weight if you keep your fat grams to 3 grams of fat for every 100 calories. It's not hard to do, but you do have to cut out quite a bit of stuff. More me it's my guilty pleasure food. However, I've had hubby doing this for a while since his cholesterol was off the charts. In once month the doc noticed such a big difference he called me and asked what I did to him. Doc is also a family friend. I just explained the change of eating habits and now he is suggesting it for a lot of his patients. I told him not to use the four letter word I dislike so much.

I think the Atkins works well and I am a meat eater. I don't think I'd have that much of a problem, but cutting out the fat works equally as well.

Diet is merely "the usual food and drink or a person or animal". For instance, the Lithuanian diet consists of kielbasa, kugeli and kapustai. That's all, really, until we provided it with negative connotations.

Be careful. They did a story on the news a while back about one person in the house being on the Atkins diet but not the rest of the family. The other members end up gaining weight because they are eating the fats and meat and not cutting the carbs.
