I have a project that calls for this special fiber and I do not know how to use it. It is the same thing as we do in embroidery floss? are there any hints or techniques I should know before using this? I have never used variegated floss so I have no idea how to use this.
Needle Necessities Overdyed floss is dyed on Anchor cotton embroidery floss, so it's exactly the same as floss.
Don't use a loop start. (Although,even that is an "it depends". Some NN floss is simply just different shades of the same color, and a loop start would make the stitching more mottled. Other NN colors have more dramatic color changes, and a loop start would muddy the colors.)
other than that, it's all personal preference.

I've just finished the stitching of a wedding sampler with NN's "Moulin Rouge." There is no way this could ever look "muddy"! (But I know what you mean.)
