Depends on the pot. The crockpot I had originally would never reach boiling, even if you left it on High for a week.

Fortunately (or un, depending how you look at it), I washed it out, set it upside down in the sink to drip dry, and it never dawned on the cleaning lady to wash her hands or to dump her scrub bucket into the other side of the double sink instead of the one nearest to where she was standing. When I turned it right-side-up the next day, several cups of rust-colored water came out of the bottom (labelled "do not immerse"). I wasn't going to risk plugging it in after the electronics had been marinating in dirty water overnight.

Out with the old one-piece, in with the new one with the removable crock. This one will hit boiling after a time ... even Low will hit boiling if you leave it turned on long enough.

I'm not sure I like that; my recipe for barbecue sandwiches requires cooking the meat for 2-3 days on Low, and because the new pot reaches boiling, that means several times a day I have to add more water to replace what's boiled off; if I forget, I wind up with scorched meat. Went to the thrift store and bought a second, secondhand crockpot of the same type as the original; next time I make barbecue, I'll see if that one simmers or boils.

Oh, we have all of those Le Creuset ones. I can`t pick the darned things up - but then John does most of the cooking, so that`s OK. Never associated them with Dutch Ovens though.
