OT- help needed with recipie

Hi all,



My youngest son kindly decided to pick almost half my apple crop 2 months early and I am hoping someone would know a recipe to make something from them so I don't have to throw them all away.



so... has anyone got a good apple recipe for unripe apples?

My gramma always swore that unripe apples were the very best kind for making things like mint jelly, and other such things that won't jel on their own. Herb jellies are a wonderful thing to have in the pantry. My mom's side always prefered green apples for pies and general baking as well. I don't know as they used them quite as green as yours must be though!

thanks! I did that but wanted to know if anyone here had a tried and true recipe :-)

I did discover that July picked unripe apples make perfect apple pectin - used to make sure *any* jam sets *and* that the pulp from making the pectin makes a great apple sauce :-D

yes that sounds plausible when I compare it with the recipe I found for apple pectin - it makes a setting "jelly" to mix with fruits for making jams and leaves a lovely pulp for pies, apple sauce etc.

sounds like jam making is on the menu for today :-)
