ot we have snow!!!

Well, I am sure my neighbor was confused. I was making Spanish rice, cooking boneless skinless chicken breasts, and baking the cake - all at the same time.

okay, so here is what I did: mix well together:

1 - 30oz can canned pumpkin pie mix 1 - 12oz evaporated milk [I found fat-free and used that] 3 eggs 3/4 cup sugar 2 tsp pumpkin pie spice 2 tsp cinnamon 1 tsp salt

pour into 13"x9" pan

top with

1 box yellow cake mix sprinkled on top [optional 2 cups pecans or walnut pieces] equivalent of 3/4 stick of butter [I used soft margarine with no problem] poured over top

bake in 350 degree oven for 50 minutes

By cutt> not sure how close these are to her recipe... but gives you an idea!http:=//

Hey, Karen! Small world..... I grew up in Pinole! It has changed a lot from then until now... I do remember one winter when I was small that it snowed ~ an extremely rare occurrence! Not something we see here in the Bay Area on a regular basis. I did see the snow today on Mt. Diablo when I was in Lafayette at the Cotton Patch quilt shop. So pretty.....

sorry i dont use the cake mixes we've got here. so what is the weight of the cake mix in a box? then i can figure out the right amount of dry ingredients here. why is it 'dump'? could be a couple of things so i'm ask'n to be sure. cheers, j.

I have used this recipe Jeanne. Dad likes pumpkin and at 84 with low weight, BP an cholesterol he can eat anything! It is not very good for you but tastes wonderful if you like pumpkin but don't use box mixes. Any cake with buttermilk in it seems to be moist and good.

I think the dump is that it all literally just dumps into the pan and is quick and easy. Great when you are in a hurry. TAria

now that looks like a good recipe, thanks, Taria. i'll see if i can adapt the fat content tho. now worrys tho, dh would eat all of it given half a chance. it'll now have to wait til autumn at least, til the bigger pumpkins come into season here. time for me to work out the kinks. a dump here conjurs up a whole different image tho. : / cheers, j.
