OT what to fix with Brisket

DH is having his first bring a dish luncheon at his new job which he just celebrated his one year anniv.

Things being provided: Brisket Potato salad grn bean casserole Rolls

What can I fix to go along with this meal normally I fix Green Stuff (pistachio coolwhip fruit salad) DH says he does not think these men will eat that.

Hey Diana:

Men not like Green Stuff??? Before I retired we'd have a pot luck lunch about 3 times a year and the one thing the men requested was the green stuff. And the one who made it... well the best description I can give is a football player. No his wife didn't make it he did. Three men I worked with had a friendly discussion as to how to divide up a fresh peach cobbler among themselves. One guy wanted half, the second wanted over half of what was left and the third guy pouted because he didn't get enough so I had to make another one. How about Ambrosia.

Naturally, I looked at the color scheme here and think you need a yellow. How about a corn salad? You can make it the night before, send it to work in a heavy zip bag. Also send along a bowl for the salad that you may never see again and a big pierced sort of serving spoon. Next time you are close to a Dollar Store or Yard Sale, you might as well go ahead and stock up on things you can send to a work lunch. Sometimes they come back. Sometimes not. With the guys, I just figured they ate the bowl and spoon too. Polly

Oh Polly yellow would fit right in. Yellow corn, black beans, onion, a little red and green diced peppers, seasoning and Italian dressing and you are good to go.

Will there be a microwave for warming? I have a recipe that has never failed to please a bunch of guys.

You take a big log of velveeta cheese, mix in a jar of salsa and a can of chili without beans. Heat it up in the microwave until it's all melted and warm. Serve with nacho chips.

I'd melt it all at home, and just send it in for warming if possible.

Peach cobbler sounds good to me! I'm laughing at the friendly discussion. Or baked beans goes with brisket. Mac n cheese does at our house as well. Pickles too.

We fix a version of that here too. I use a pound of sausage, fried up in little crispies, velveeta and a can of Rotel. (diced tomatoes and jalapeno peppers) MMmm good, but not for the heart. lol

Made this for my son's birthday party, 3 of the men attending were also invited to DGD birthday party and asked for this to be included: Greek Peasant salad Chunks of Tomato Onion Cucumber

1/4 # Feta cheese Crumbled Black olives(Kalamata if you can ) oregano olive oil(2/3c.) wine vinegar(1/3 c.) Easy and no danger if left out, Make ahead send dressing separate.
