Way back more years than I want to think about, I made one by cutting one leg at about the knee stitching the cut end together. Fold over and you've got a simple clutch bag.
Another idea: cut both legs, depending on how deep you want your bag to be. Hold together and stitch together along cut. Fold along seam with seam on inside; get a wide decorative guitar strap and hand stitch each side of strap to each side of bag. Strap length would depend upon how you wanted to carry your bag.
You could make one leg a wee bit longer than the other and fold over the shorter side to created flap to cover. Use Velcro as fasteners.
Did that make sense, experiencing low blood sugar, need to eat.

I have some on my personal website that I made, no instructions tho' but prahaps they might inspire you. link below just click on Bags One recommendation I would definatly make is use heavy duty jeans needles and sew slowly when you have more than 2 layers of denim.

Hexe had some good suggestions, and another option would be to cut straight across just at the bottom of the zipper. Seam across the bottom and use the fabric from the legs to make a shoulder strap. Add velcro or snaps or some cording to hold the top closed. You'd end up with a large bag that has four pockets on the outside (two on the front and two on the back).
Here is a photo of a purse I made. Cut from a leg of the jeans and lined, just cut the lining the same as the denim piece. That's a side seam you can see at the centre front. Fastened with a vintage button and loop, strap made from vintage fabric and bag trimmed with vintage fringe. Machine embroidered. Very easy.
