Butternut for salad bowls?

Just received some large butternut and wanted to make salad bowls with it, some of it is almost two feet in the round. Turned a couple of bowls today and found that it is pretty soft, and easy to work, almost like pine but nicer grain and no pitch. Anybody see any reason why these would not make nice salad bowls.

No. The texture of butternut is similar to walnut, but a bit softer.
