Keith Rowley's "Woodturning: A Foundation Course" (new edition) is a book that's often recommended and it is one of the best in my opinion. Apparently there's also a video of the first edition, which I cannot comment on since I've never seen it.
In the UK these are published by "Guild of Master Craftsman Publications".

My recommendations:
_The Practical Woodturner_ , by Frank Pain is about the best for turning theory, not practice. Lots of people have color-illustrated books on their practices which neglect theory.
He's a COB (Crotchety Old Bodger), but he'll get you thinking of how an edge cuts wood.
I'll second the recommendation for the Rowley book. I also have the video. While I think that Raffan's videos are better produced etc., Rowley's video is a must have for basics and safety.

I have several wood turning books, but my favorite one is "Turning Wood" by Richard Raffan Lee Valley carries it and several other mail order places do too.
