Use a banana bread recipe, and drain the zucchini after you grate it. I like to add lemon zest and blueberries...

You can use any quick bread recipe (pumpkin bread, banana bread, etc.,) and substitute zucchini for the mashed whatever. Just don't add sugar.

Why not? I've always used a little brown sugar and it turns out good.

I just don't like sugar in nonsweet breads. In any case, the quantity in a banana bread recipe would be excessive.

All of these quick bread recipes are almost foolproof and you can add a bit of this or take away a bit of that without worrying that it will flop.

I've never had a non-sweet zucchini bread. My recipe is almost like my banana bread recipe (eggs, oil, sugar...) and very good too.
