Recipe Spanish Rice

Since I am enjoying all your recipes, thought I would share to :) This one is my own creation, one of the few, so I am proud of it LOL.



Spanish Rice


1 tbsp lard
3/4 cup white rice
1/2 cup diced tomato(with juice)
1/2 cup chopped onion
1 1/3 cup chicken broth
1/4 tsp salt
1/8 tsp black pepper
1/8 tsp Cayenne or to taste

Melt lard in medium skillet over medium to medium high heat. Add rice, stirring to coat, then continue to stir until nicely toasted. Add chicken broth and remaining ingredients and stir. Turn down to medium low heat, cover and simmer for about 20 minutes or until rice is tender.


*You can use vegetable oil instead of lard, but in my opinion the flavor isn't quite as good. I will also use canned, diced tomato if there aren't any ripe ones at the store.
