This is my favourite recipe for carrot cake, uses butter - never heard of oil in regular cakes??? None of the oil commercially available is native to my country, but dairy, that is a different issue :-)

Howdy!
As others have pointed out, most cake recipes do call for the addition of oil: butter, margarine, lard, shortening, veg. oil.
I always substitute applesauce for the oil, measure for measure. And the cake always comes out extra moist and delicious. This includes the rare carrot cake made here, whether made from "scratch" or w/ a mix. Natural applesauce (no sugar added) works for me; no extra oil needed.
