Book recommendation

Can anyone suggest a book, that hopefully would be available in Australia, about the techniques and methods of pastry cooking. A few recipes for illustration purposes would be OK but it must be strong on the how-to, not assume that you already know that.

Hi! Try the "French Professional Pastry Series" (4 volumes) available from Amazon.com or if by any chance out of print, try abebooks.com. It's an excellent resource of techniques (and pictures) and you can REALLY learn from them. I own lots of books these are perhaps the most valuable! They are a bit pricey though, but believe me worth every cent. Also try "Baking" by Wayne Gisslen, or the "Professional Pastry Chef" and "The Advanced Professional Pastry Chef" both by Bo Friberg. Another related book which is as important is from the Culinary Institute of America titled Baking and Pastry (Matering the Art and Craft) which I think is avaiable also in that bookstore. It is also available in The Essential Ingredient located in Prahran Mebourne
