In previous posts I've always extolled the virtues of using my Bosch to knead bread then baking in the oven. Well this summer that finally arrived after a cold spring is just too hot to even think about putting the oven on. It also has been nothing but humid, which makes it even worse. So I succumbed and took my Phillips breadmaker of the shelf as I was getting tired of spending money for organic WW bread.

Made a loaf of WW last night and it came out pretty delicious. Mind you now that I know *how* to make bread I can monitor what goes on and make adjustments where necessary. Loaf was very "light" which surprised me for a WW bread. Perhaps the fact my machine does a short pre-heat before starting makes a nice comfy environment for the yeast. Think I'll keep using the bread machine until Fall, it is easier to clean up after using (just put the empty pan on a scale, weigh in the ingredients, put pan back into the machine), and does not heat up my kitchen.

i recently read a blurb in king arthur flour's catalog which extols the virtues of kneading (but not baking) dough in a bread machine. they showed a cross-section of a loaf kneaded in a bread machine, and one kneaded in a mixer ( i think it was kitchenaid). There was a huge difference between the two. The bread machine-kneaded loaf rose higher and was lighter.
