Dan will take us on a historical journey starting with the Egyptians 6500 years ago, and visiting the Romans, the Poles, Czechs, Germans, Scandinavians, Northern Africans, the British Islanders, and the Americans. Dan will talk about the parallels of the "wisdom loaf" made by both the Celts and the Native Americans.

Dan "Klecko" McGleno is the production manager at the Saint Agnes Baking Company in Saint Paul, a professional bread baker for 23 years, and a bread historian, educator, and mentor to both professional and home bread bakers.
