What Jill and I used to do was to put the tomatoes into the freezer for a few days. When they were thoroughly frozen, it was very easy to get the skins off them, by putting them briefly into hot water. We then let them thaw, put them into ice cube makers, and stored them in the freezer for use later. Jim.

If you want to skin the tomatoes to use right away - simply make a quick x-cut in the skin at the bottom of the tomato and dunk into boiling water - just for 20 seconds or so - not too long or you'll cook the tomato. The skin will slip right off.

I do this when I have an abundance and freeze them skinless - one less step later :)

You can also just put them into a dish of water in the microwave - a few tomatoes, less than a minute - just keep an eye, and they peel quite easily.

If I have a bunch, then I do the blanch and quench thing (boiling water, then cold ).

This works for peaches, too. Lower them into boiling water for about 15 seconds, then pull them out and they peel easily.

I have a bunch frozen for peach cakes in the winter! Yum!

OMG...how CAN you have Burns night without piping in ( and eating) the haggis....which I hppen to enjoy.

We had three great years stationed in Scotland, living with the locals , kids went to Scottish schools and almost all our friends were the local residents!

Probably after 35 years it wouldn't be the same "sigh".
